GDV's Summer Salad

Caprese. Caesar. Cobb. Nicoise. In the spring + summer months, salads become almost a daily practice for us. Although all of these iconic dishes are delicious in their own right, we're sharing our own summer go-to. Filled with fresh lettuce + cabbage, tomatoes, artichoke hearts, avocados, cucumbers, and more discover our favorite GDV summer salad for a simple, healthy + colorful alternative,

spring salad

SaladServes 4-6

  • 1/2 head Napa Cabbage, chopped

  • 1/3 head Red Cabbage, chopped

  • 1 1/2 cups cucumber, sliced

  • 1/2 cup scallions, sliced

  • 2 avocados, diced

  • 15oz can artichoke hearts

  • 1 cup grape tomatoes, halved

  • 1/4 red onion, thinly sliced


  • 2 tbsp Horseradish Mustard

  • 1/4 cup avocado oil

  • 1/4 cup extra virgin olive oil

  • 1/2 tsp lemon juice

  • 1 tsp maple syrup


For the Dressing, add all ingredients into a bowl and mix until combined. 

Place layer of chopped Napa cabbage on the bottom. Lay other ingredients on top of cabbage bed. Drizzle with dressing. Mix and Serve. 

*Add grilled chicken or tofu for a little extra protein.
